When I share a post from my website on Facebook many times the thumbnail image is displayed small and other times it is displayed full screen. What I really want is for it to always be displayed full screen, I don't like it to be displayed this way
I want the image to always be shown complete, covering the entire publication, but I don't know how to achieve it. There are articles on my blog that when I share them on Facebook they are shown as I want, instead most are shown with the small image that is how I don't like it.

This happens because you haven't told Facebook the width and height of your image. There are many websites where you can learn about Open Graph meta tags and tailor the links you or your users share to your needs. I recommend that you provide as much data as possible to Facebook.
In this case, you must specify to Facebook that your image is larger than the minimum size to add the image with description.
Not to get too far off track, with those two lines of code you are telling Facebook that your images have a width of 1200 px and a height of 627 px and whenever a link of yours is published on facebook, the large image will appear with the title without the description. Now, I have to tell you that even if you put this code together with what you already have, the old posts will not work, it will only work with the new articles that you have created.
For example, if you publish an article on your website talking about animals, when you share that link to that article on Facebook it will appear in the large image, but older articles will not appear in the large image.
